Favourite Weight Loss Recipe For Cinnamon Bread

Cinnamon Swirl Protein Bread

I came across this recipe last week and it is far too yummy not to share.  Jamie Eason, a fitness model and a regular writer in Fitness RX magazine, (which by the way is an incredibly informative and motivating magazine if you haven’t had the privilege) shared her favorite healthy recipe in February 2012 issue , and I would like to share it with you.

Preheat Oven to 180 degrees Celsius

Spray an 8 x 8 inch pyrex dish with non-stick olive oil spray

In a small bowl combine: (set aside)

1/3 cup Stevia

2 tsp cinnamon

In a large bowl combine (whisk together)

1 ½ cups oat flour + 2 scoops vanilla protein powder, 1 tbsp baking powder, ½ tsp salt, ¼ cup stevia

In a medium bowl combine (whisk together and add to large bowl)

2 egg whites

1 cup unsweetened almond milk

1/3 cup jar of baby food applesauce and ¼ cup low sugar vanilla yoghurt

Pour a shallow layer of batter into the loaf pan (about ¼ of the batter).  Sprinkle heavily with half of the cinnamon/sugar mixture.  Repeat with remaining batter and cinnamon/sugar on top.  Draw a knife through the batter to marble.

Bake 24 – 28 minutes.  Let cool for 10 minutes.  Bread will be dense.

Enjoy!  This is an ideal mid morning meal if you are doing my 12 week Lean Body System.

I would love to hear your feedback.
